    MeetChef Amador Fernández Van Vlijmen

    A distinguished member of "Grupo Gastroarte", which includes the most prestigious chefs in Andalucia. Experience his creative dishes along with the best views of Málaga and Mediterranean Sea.
    Chef Amador left his country of Spain at a very young age in search of knowledge surrounding the international and French cuisine. After completing studies in England, France, and Holland he returned to his hometown of Málaga where he opened his Restaurante Amador, which forms part of Hotel Villa Guadalupe.

    Chef Amador combines his love of the sous-vide cooking technique, world travel, and fresh local ingredients to create a fusion of Spanish and international cuisines.
    Enjoy an array of dishes including paellas cooked in a charcoal oven, traditional “sharing-style” dishes including croquettes and foie gras, seasonal dishes such as confit artichokes, internationally inspired ceviches and tartars, 24 hour slow-cooked baby lamb shoulder, and many more. Vegetarian, vegan, celiac, and other dietary options are certainly available upon request.
